Cook’s Notes: This is a house favorite. We keep a container of this dressing in the fridge. It is especially good with tossed salads that contain fresh baby spinach.
Place all ingredients in a small container with a tight-fitting lid. Shake well to combine.
2 T olive oil
2 T rice wine vinegar
2 T white balsamic vinegar (from Trader Joe’s)
4 teaspoons honey
2 teaspoons Dijon mustard
1 teaspoon mild curry powder
Fruited spinach side salad (per person): 2 cups baby spinach leaves, 1/3 cup tangerine slices or mandarin orange segments, 1/3 cup fresh blueberries, a few slices red onion, and 1 T chopped walnuts.
