Best Recipe: Hot Corn Dip

Cook’s Notes: Positively addictive! It is good with tortilla chips or pita chips or served as a side dish. It is a favorite dish at parties and potlucks.

16 oz bag frozen corn kernals (4 c), such as Trader Joe’s Roasted Corn
14.5 oz can diced tomatoes with sweet onion
8 oz package cream cheese, cut into large cubes and softened
1/2 tsp Mild Chili Spice Mix (instead of plain chili powder)
1 tsp garlic powder, such as Garli Garni

Heat oven to 350F.

Put the corn in a microwave-safe bowl and heat on High for 5 minutes. Drain the tomatoes and add to the corn. Add the block of cream cheese and microwave for another minute to soften the cream cheese. Stir in the spices until well-blended.

Lightly coat a glass baking dish with cooking spray. Place the corn mix in the baking dish and smooth the top. Bake in the preheated oven 30 minutes, or until hot and bubbly.
