Peach Lemonade

Cook’s Notes: On a recent trip to Bisbee, AZ, we discovered the Cornucopia Cafe. Their delightful peach lemonade inspired me to create my own version. It is the perfect summer drink, slightly tart, and easy to make into spritzers.

3/4 c sugar
3 c water, divided
1.5 lbs fresh peaches (4 to 5), pitted and halved
1 T sugar
1.5 c lemon juice

Make the simple syrup: Combine sugar and 1 c water in a glass measuring cup. Microwave on High for 1 minute. Stir. Microwave on High for another 1 minute. Stir. Mixture should be clear.

In a blender, puree the peach halves with 1 T sugar and the lemon juice.
Combine the simple syrup and peach puree (48 oz) in a 2-quart pitcher. Add 2 cups water to make 2 full quarts. Stir well.

Add 1 part water when serving: fill a glass 3 parts lemonade and top with water, sparkling water, Sprite, or club soda. Stir gently before drinking.
