Big and Little Bacon Pizzas

Cook’s Notes: The 13-year-old daughter of a friend is staying with us this week, and we planned to make pizza. Thinking one pizza shell wouldn’t be enough for the family, she asked if we could also make a can of biscuits to go with dinner. Instead, we made mini biscuit pizzas to go with the big pizza. Even turkey bacon can be salty: we served the pizzas with cut-up watermelon chunks. The mini pizzas could be a main dish with a salad or a great party appetizer.

13 oz flatbread pizza crust
1 can of 8 refrigerated biscuits
8 oz can pizza sauce
12 oz pkg turkey bacon
8 oz box of sliced mushrooms
1/4 tsp Penzeys Pizza Seasoning (or dried basil)
5.73 oz (drained wt) can of black pitted olives, drained
1.5 c shredded mozzarella cheese

Heat oven to 450F. Coat two cookie sheets with cooking spray. Place the pizza crust on the first cookie sheet. Flatten the 8 biscuits into 4-inch rounds with your fingers, and space them evenly on the second cookie sheet.

Spoon 1 T tomato sauce evenly over each biscuit crust within 1/2-inch of the edge. Spread remaining tomato sauce on the pizza crust within 1/2-inch of the edge.

Chop the turkey bacon into small pieces. Coat a skillet with cooking spray and cook the turkey bacon over medium heat until crisp. Drain the fat. Place bacon in a medium-size bowl and set aside.

Sauté the mushrooms in the skillet until tender. Deglaze the pan with a small amount of water if needed. Add the mushrooms to the bowl with the bacon.

Break the olives into large pieces. Add them to the bacon-mushroom mixture. Stir in the 1/4 tsp spice, and mix until toppings are well combined. You won’t need all of the topping mixture.

Spoon hot bacon topping evenly over each biscuit crust and over the pizza crust. (We had about 1 c of topping left. Store any leftover topping in the refrigerator for another use, such as omelets). Top the pizzas evenly with shredded cheese.

Bake the biscuit pizzas for 10 minutes and the large pizza for 12 minutes. Cheese will be melted. Use a spatula to loosen the pizzas from the pans. Cut the large pizza into 8 slices. Makes 8 servings (a serving is 2 biscuit pizzas or 2 slices or regular pizza).
