Cook’s Notes: This simple spinach preparation is a staple in our house. We eat it at least once a month year round. It’s our go-to spinach recipe.
1 lb fresh spinach (2 bunches)
1 T butter
2 T extra virgin olive oil
1 T minced garlic
1 T lemon juice
Wash and spin dry spinach. Remove any really large stems. Heat butter and oil in skillet. Add garlic and cook 1 to 2 minutes. Add dry spinach. Cover pan and cook 5 to 6 minutes over high heat to steam spinach until tender. Remove from heat; sprinkle with lemon juice. Serve hot.
