Cook’s Notes: Can you call it “best recipe” when there’s not a strict recipe? My friend Henry made this for a dinner party, and everyone raved about it. Even the picky toddler and people who don’t like a lot of broccoli like this salad. When asked for the recipe, Henry laughed and said, “There is no recipe.” But he did share his guidance for proportions. I’ve also made this for a potluck at work, and again, it was well received.
2 packages (12 ounces each) broccoli slaw with carrots
Half of a 12 oz can (about 1 c) honey roasted peanuts
About 1 c balsamic vinaigrette salad dressing (about half of a 16-oz prepared bottle, your favorite brand)
Toss all ingredients together in a large bowl. Start with a large handful of peanuts and add more if you need to. Use just enough salad dressing to coat the slaw; it shouldn’t be soaking wet. Serve immediately, or chill for 1 hour before serving.
