Butterscotch Peanuts

Cook’s Notes: Similar to Haystack Cookies, but without chow mein noodles. These are very easy to make and are most likely gluten free, depending on the morsels ingredients.

You need 1 cup butterscotch morsels (1/2 bag) and a 12-oz can salted peanuts.

In a microwave-safe large bowl, heat chips on medium power for 1 minute. Stir. Add 1/2 tsp olive oil into the bowl and stir again. Heat chocolate on medium at 30-second intervals, stirring well after each heating until chips are completely melted and smooth.

Add peanuts to the melted chocolate. Stir to mix well with a rubber spatula, being sure to completely coat all the nuts. Spread mixture onto parchment paper to cool, separating the mixture into individual pieces or bite-size clusters (the easiest way to do this is by hand, wearing food-safe disposable gloves). When chocolate is set, store mix in an airtight container. Makes 3 cups.
