I made a triple batch of this tortellini salad for an open house recently, and it was the hit of the party. Nothing makes a cook happier than getting asked for the recipe, and that happened several times with this dish. The balsamic dressing is so tasty.
I used a large handful of pre-shredded carrots instead of chopping carrots. To chop the basil easily, roll the leaves up into tight tubes and then cut them with kitchen scissors. This salad would also be great with olives added. Thanks, Karen on RecipeZaar, for sharing such a wonderful dish.
