Total time: 15 minutes
1/2 cup plus 2 tablespoons all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup milk
1 tablespoon vegetable oil
3/4 teaspoon vanilla extract
In a bowl, combine the flour, sugar, baking powder, cinnamon, and salt. In another bowl, beat the egg with a fork. Stir in milk, oil, and vanilla. Stir into dry ingredients just until combined. In a lightly greased skillet, drop batter by 1/4 cupfuls.
Cook until golden brown, about 2 minutes on each side. Yield: About 6 pancakes. Serve warm with pure maple syrup and fresh fruit.
