Coleslaw with Yogurt Dressing

Cook’s Notes: We buy several containers of plain non-fat yogurt every week. Here’s a way to use it in coleslaw to lighten the mayonnaise dressing.

16 oz bag coleslaw mix
2 green onions, chopped
1 cup shredded carrots
3/4 cup fat-free plain yogurt
1/4 cup low-fat mayonnaise
1 tsp grated lime peel
1 Tbsp fresh lemon juice

In large bowl, mix coleslaw mix, onions, and shredded carrots. In small bowl, mix yogurt, mayo, lime peel and lime juice; gently fold into coleslaw mixture. Refrigerate at least 15 minutes but not longer than 4 hours to blend flavors. Cover and refrigerate remaining coleslaw. Makes 12 servings (1/2 cup each).
