Cashew and Mango Salad

Cook’s Notes: Unique and delicious, this salad has been a favorite with our family since 2002.

1 mango — peeled, seeded, and cubed
1 Granny Smith apple — peeled, cored and diced
3/4 cup toasted cashews (lightly salted)
1 Tbsp balsamic vinegar
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1 pinch salt

In a medium bowl, toss together mango, Granny Smith apple, and cashews. Stir together the balsamic vinegar, cinnamon, ginger, and salt. Toss salad with this dressing.
