Cook’s Notes: I really enjoyed this unusual combination of flavors and found it refreshing. I’m also intrigued by this cucumber, corn, and blueberry salad.
Serves 2. Whizz together in a blender the following:
- 1 medium cucumber, washed and sliced (leave the peel on)
- 1 cup frozen blueberries
- 1 cup plain, fat-free yogurt
- 1/2 cup organic apple juice
