Cook’s notes: A summer classic — also good when mixed with seltzer water.
1.5 cups water (12 oz)
1/2 cup sugar
16 oz box strawberries, capped
1 cup lime juice
Up to 4 additional cups water
Start by making a simple syrup. In a small saucepan, heat the 1.5 cups water and sugar over medium-low heat until the sugar dissolves. Turn off the burner and let the syrup cool.
Puree the capped strawberries and lime juice in a blender. Strain the puree into a 2-quart pitcher; discard the seeds. Add cooled simple syrup to the pitcher. Stir well. Stir in additional cold water until you have 2 quarts (8 cups) total. Pour over ice.
Makes 8 servings.
