Cook’s notes: No shortening, no butter, no dairy… but fluffy and wonderful biscuits. I used half whole-wheat flour and coconut milk beverage, the kind that comes in a carton for drinking, not the can. You can also pat the dough out into a rectangle and cut into squares.
The finished biscuits don’t need butter or margarine or even jam. They are delicious plain, or with a drizzle or honey or even extra olive oil.
1 cup all-purpose flour
1 cup white whole-wheat flour
1 Tablespoon baking powder
2 Tablespoons sugar
1 teaspoon kosher salt
1/3 cup olive oil
2/3 cup coconut milk beverage
Heat oven to 475F.
Mix dry ingredients in the bowl of a stand mixer with the dough hook attached. Put oil and milk in measuring cup: Do not stir. Add to dry ingredients.
Mix lightly to moisten ingredients, with the minimum amount of mixing, and knead one or two times to form ball.
Pat dough out into a circle onto parchment paper and cut into 8 wedges.
Bake on an ungreased pan for 10 to 12 minutes, until lightly browned.
