Menu: Roasted Kielbasa

Cook’s notes: This menu comes together quickly and is suitable for New Year’s Day or any weeknight.

  • Roasted Turkey Kielbasa (fully cooked already): Slice kielbasa into chunks. Place on a cookie sheet lined with foil and bake at 350F for 20 minutes until sizzling.

While the kielbasa cooks, make the beans and rice:

  • Easy BBQ  Black-Eyed Peas: Open, rinse, and drain a 15-ounce can of black-eyed peas. Heat in a saucepan with 1/3 to 1/2 cup barbecue sauce (any brand, but use one without corn syrup). Add 1/4 cup water; stir to coat the peas with the sauce. simmer on low 15 to 20 minutes until heated through.
  • Frozen Brown Rice: Microwave according to package directions.

Place 1/2 cup rice (2 ice-cream scoops) in a bowl. Top with 1/4 to 1/2 cup black-eyed peas and pickle relish to taste. Serve with sausage pieces.
