This green smoothie is muddy in color and packed with greens and lightly sweet. You do taste the greens more than the fruit. Its name comes from the mixed greens I used: “Deep Green Blends – Power” by Earthbound Farms. The Berry Medley is from Trader Joe’s. I used a Tablespoon-sized cookie scoop to measure out the nut butter: very easy to measure that way!
Makes about 20 oz.
8 oz. unsweetened vanilla almond milk
4 oz. plain, fat-free Greek yogurt
60 g (about 2 cups) mixed greens (baby spinach, baby red and green chards, and baby kales)
30 g (about 1 cup) baby spinach
75 g frozen peach slices without added sugar
75 g frozen Berry Medley without added sugar (strawberries, blackberries, blueberries, and raspberries)
1 Tablespoon (15 g) natural cashew butter
Puree all ingredients in a blender until smooth.
