Whirled Crystallized Ginger Tea

IMG_3190Cook’s notes: Reworking one of the tea recipes in Singers’ Home Remedies: Garlic, Honey, and Ginger page to use my Vitamix blender instead of straining out the ginger. It has a lot of lovely flavor and most everything is measured in three’s. Honey and black pepper are supposed to be good for a cough; ginger soothes a sore throat.

Makes 2 to 4 servings. Serve warm.

Bring 3 cups water to a boil in a pot on the stove. Add 3 Tablespoons crystallized ginger. Reduce heat. Simmer for 20 minutes; remove from heat.

Pour the ginger water into the Vitamix container. Add 3 Tablespoons honey, 3 Tablespoons lemon juice, and a large pinch of black ground pepper.

Secure the lid. Turn the machine on to Variable speed 1 and slowly increase speed to 5 or 6. Blend for about 30 seconds or until desired consistency is reached. Serve immediately.

NOTE: This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different machine, you may need to make adjustments to the speed or processing time. Know your blender and don’t overload the machine.
