Kefir Smoothie

renderedcontent-7272beda-1819-48e4-a940-c74ff8af47b6Cook’s notes: Kefir gives this smoothie a wonderful tangy flavor. This is a great smoothie without greens, similar to the transitional Low Fiber Smoothie: Peach.

Makes about 3.5 cups. (2 servings)

 

2 cups vanilla Kefir yogurt drink
2 Tablespoons olive oil
1 banana, peeled and chopped
3/4 cup frozen blueberries (unsweetened)
1/4 cup frozen cherries (unsweetened)

Add all ingredients in the order they are listed (from liquids to soft to hard to frozen) to the Vitamix container. Secure the lid.

Turn the machine on to Variable speed 1 and slowly increase to speed 10. Turn the machine to High.

Use the tamper to push frozen fruit into the ingredients as needed.

Blend for about 45 seconds or until desired consistency is reached. Serve immediately.

NOTE: This recipe has been written for the Vitamix 5200 with Standard 64-ounce container. If you are using a different machine, you may need to make adjustments to the speed or processing time. Know your blender and don’t overload the machine.

Beginner’s green smoothie

3 of 3 in a series. The purpose of the transitional smoothie is to help someone transfer from a low-residue diet back into regular eating after being on antibiotics. On Day 1, we made a gentle peach smoothie with a touch of ginger. On Day 2,  we made a simple smoothie with blueberries. Today, we add greens and peanut butter. This green smoothie would also be good for the beginner who wants to learn how to add greens to their drink.

If you’re new to smoothies, you may want to add half a banana to your drink. You can see the color of this smoothie is deeper than the Day 2 smoothie with only blueberries.

 

Transitional Smoothie – Day 3

Makes about 3 cups (2 servings)

1 cup unsweetened vanilla almond milk
1 cup plain, fat-free Greek yogurt
1/2 teaspoon cinnamon powder
1 Tablespoon peanut butter
1 cup (30 g) raw baby spinach or greens mix
1 cup frozen blueberries without added sugar

Add all ingredients in the order they are listed (from liquids to soft to hard to ice) to the Vitamix container. Secure the lid.

Turn the machine on to Variable speed 1 and slowly increase to speed 10. Turn the machine to High.

Use the tamper to push ice into the ingredients as needed.

Low Fiber Smoothie: Blueberry

2 of 3 in a series. The purpose of the transitional smoothie is to help someone transfer from a low-residue diet back into regular eating. The “Day 1” smoothie is the first day after your antibiotics have ended. This low-fiber smoothie for your second day back on a regular diet has a bit more fiber than the Day 1 smoothie. On Day 2, we still hold back on the greens. Greens will get added in on Day 3.

Transitional Smoothie – Day 2

Makes about 3 cups (2 servings)

1 cup unsweetened vanilla almond milk
1 cup plain, fat-free Greek yogurt
1/2 teaspoon cinnamon powder
1 Tablespoon pecan pieces
1 Tablespoon extra-virgin olive oil
1 cup frozen blueberries without added sugar

Add all ingredients in the order they are listed (from liquids to soft to hard to ice) to the Vitamix container. Secure the lid.

Turn the machine on to Variable speed 1 and slowly increase to speed 10. Turn the machine to High.

Use the tamper to push ice into the ingredients as needed.

Most of the time, the ideal smoothie has extra fruits and vegetables in it, including leafy greens. However, this smoothie is different and on purpose.

The purpose of the transitional smoothie is to help someone transfer from a low-residue diet during illness back into regular eating. For example, if you were taking Cipro for an infection and couldn’t eat any dairy or raw produce while taking the antibiotics. “Day 1” is the first day after your antibiotics have ended. The low-fiber smoothie for your first day back on a regular diet has no nuts, extra oil, flax seeds, or other fiber boosts. It omits the greens altogether.

Transitional Smoothie – Day 1

Makes about 35 oz. (2 servings)

1 cup plain, fat-free Greek yogurt
1 cup unsweetened vanilla almond milk
1/4 teaspoon ginger powder
15 oz. can sliced peaches in juice (2 cups)
1 cup banana, peeled, chopped and frozen (1/2 cup banana chunks)
Add all ingredients in the order they are listed (from liquids to soft to hard to ice) to the Vitamix container. Secure the lid.

Turn the machine on to Variable speed 1 and slowly increase to speed 10. Turn the machine to High.
